Okay, so we decided that for my daughters first birthday we would have a luau
My brand-new La Caja China was just sitting here begging to be fired up
So I picked up four pork shoulders dug out my Sam Choy Sampler Cookbook which I picked up in Maui to put together the ultimate luau and away we went
Turned out amazing
I've done numerous pork shoulders in both the oven and in my pit smoker but the Caja produced the most tender moist pulled pork I've ever had
It was even better than what we had in Hawaii
The Caja China is THE best way to cook pork

I cook in the box model #1 last sunday, a pig of 45 pounds, in only 3 hours, I used the thermometer, and I"m very happy with the results. The skin came out really crispy. Thank you.
