La Caja China's new Semi Pro model is like the 1969 Camero of roasting boxes with mag wheels and the chrome trim package
Last weekend, I had the opportunity to roast an eighty-pound pig Carolina style for my nephew's graduation. It was my first time firing up the Semi Pro model and the ohhs and ahhs that greeted me as I unloaded the roaster were a sign of good things to come.
Cooking was flawless. I simply followed the easy, step by step instructions and about three hours later we were serving perfect roast pig. In The hardest things for me when cooking in La Caja China is to just leave it alone and let it work the magic.
One warning about roasting a whole pig in La Caja China. For the last forty five minutes that the pig is inside the box there's an ever expanding cloud of mouth watering aroma outside the box. This will gather friends and family and neighbors you've never met in seagull like crowds to your yard.
